Ethel was employed by Mamco Corporation in the production department for 30 years. Ethel was an avid supporter of the Greek Church in Racine and held various positions in the Ladies Philoptochos Society. She frequently visited sick and homebound members of the church and often accompanied church priests during their visits. Ethel was a generous lady and always welcomed her family, friends and neighbors to her home. She was a gracious hostess and exceptionally talented baker. She will be missed dearly by all who knew her.

Her husband, Theros, died in 1972. On June 13, 1979, she married Steve Simon of Milwaukee and they spent many happy winters in Florida. Ethel was deeply saddened and her life forever changed upon the death of her youngest daughter, Angeline Henrickson in 1999.

Surviving are her daughters, Dora Prophet of Walnut Creek, California, Evelyn (Robert) Kobal of Racine and step-daughter Kay Simon of California; grandchildren Alex and Gregory Prophet, Drs. Karla (John) Poth, Dr. Heidi (David) Shufelt, Len (Michele) Kobal, Athena (Michael) Eggers, John, Raina and Zachery Zwadzich; nieces and nephews, Mary Angulatos and Irene (Howard) Crossley, Ourania Melissaratos, Jimmy (Katarina) Melissaratos, Tasia (Dean) Stoios, Alex (Stacy) Floratos, Dimitris (Maria) Floratos; nine great- grandchildren; and wonderful friends Doris Labrasca and caregiver Mima Hristova.
